I am a genuine oatmeal cookie monster... I only counted, and as of January 2018, I have shared 47 oatmeal cookie recipes with you. Eep! Have you ever tried any of them yet? (? You'll find all of my oatmeal cookie recipes directly there!) They are some of the most well-known recipes on my website because they taste very sweet and cozy, exactly like conventional"indulgent" oatmeal cookie recipes, but they contain no refined flour or sugar!

That means you will start with whole wheat germ (or fermented, if you prefer) and prompt oats (like those... or these for a gluten free version!) . Immediate oats are smaller and thinner than traditional rolled oats, also you are able to find them at canisters right alongside those old-fashioned oats in the grocery shop.

I probably sound like a broken record by now... But because I ? you and need your cookies to turn out absolutely soft and chewy, I am reminding you ... Measure your yogurt and bread correctly, applying this method or a kitchen scale! (? That's the one I own and love. A lot of either side will make your cookies taste cakey or sterile, rather than chewy. This is particularly true of this oats--they act like little sponges and consume lots of moisture from your cookie dough!

See these bananas? And all those brown spots? If it comes to baking bananas, brown = beautiful! I ? extra speckly bananas cause they've a lot glowing, bold taste --along with additional natural sweetness! That's the minimum amount of brown that I recommend. More is better!

The remaining portion of the cookie dough's sweetness comes in a different organic ingredient... Pure maple syrup (such as that!) . You would like the sort that comes directly from maple trees, which is typically offered in skinny glass bottles or squat, round plastic jugs. Skip the pancake syrup and sugar!

Yields: 15 cookies

These oatmeal biscuits are soft, chewy, and full of banana flavor! The recognizable cozy spices and plump blueberries make them even more irresistible. They will keep for at least one week if stored in an airtight container in the fridge --if they last that long!

 


1 cup (100g) instant oats (fermented if essential and measured like that )

3/4 cup (90g) whole wheat or gluten-free* flour (quantified like that )

1 1/2 tsp baking powder

1 1/2 tsp ground cinnamon

1/4 teaspoon salt



1/4 cup (63g) mashed banana

1 tsp vanilla extract



1/4 cup (40g) raisins

In a medium bowl, whisk together the yogurt, milk, baking powder, cinnamon, and salt. Add in the flour mixture, stirring just until incorporated.

Preheat the oven to 325°F, and line a baking sheet with a silicone baking mat or parchment paper.

With a spoon and spatula, drop the cookie dough into 15 curved scoops onto the prepared sheet, and flatten to the desired depth and width using Vegan Chocolate Chip Cookies Recipe by Tasty a spatula. Bake at 325°F for about 10-12 minutes. Cool to the pan for 10 minutes before turning out onto a wire rack.

Notes: It is extremely important to quantify both the wheat and oats properly employing this technique or a kitchen scale. (? That's the one I have and adore!) Too much of either could dry from the cookies and leave them cakey rather than chewy.

Instant oats are also referred to as quick-cooking or minute oats. They arrive in huge canisters, just like old-fashioned oats. They are not the ones in the small flavored loaf of bread. To create your own, add the same quantity of old-fashioned oats to your food processor, and pulse 10-12 times or until the oats will be approximately 1/4 into ? of the initial size.

For the fermented flour, I recommend the following blend: 1/2 cup (60g) millet flour, two tablespoons (15g) tapioca flour, two tbsp (15g) brown rice , as well as 1/2 tsp xanthan gum. Most store-bought fermented flour blends (such as that one!) Will also do the job, if measured like this.



If your raisins are elderly, dryer, and not so plump or succulent... Add them into a microwave-safe bowland pour water at the top till they're completely coated. Seal plastic wrap across the top, and then microwave the bowl on high for 1 minute. Should you allow the peppers sit mixing together the cookie dough, this little trick hydrates them they're really tender and juicy!
