I am a genuine oatmeal cookie monster... I only counted, and as of January 2018, I have shared 47 oatmeal cookie recipes with you. Eep! Have you ever tried any of them yet? (? They are some of the most well-known recipes on my website because they taste very sweet and cozy, exactly like conventional"indulgent" oatmeal cookie recipes, but they contain no refined flour or sugar!

These oatmeal biscuits are soft, chewy, and full of banana flavor! The recognizable cozy spices and plump blueberries make them even more irresistible. They will keep for at least one week if stored in an airtight container in the fridge --if they last that long!
1 cup (100g) instant oats (fermented if essential and measured like that )
3/4 cup (90g) whole wheat or gluten-free* flour (quantified like that )
1 1/2 tsp baking powder
1 1/2 tsp ground cinnamon
1/4 teaspoon salt
1/4 cup (63g) mashed banana
1 tsp vanilla extract
1/4 cup (40g) raisins
In a medium bowl, whisk together the yogurt, milk, baking powder, cinnamon, and salt. Add in the flour mixture, stirring just until incorporated.
Preheat the oven to 325°F, and line a baking sheet with a silicone baking mat or parchment paper.
With a spoon and spatula, drop the cookie dough into 15 curved scoops onto the prepared sheet, and flatten to the desired depth and width using Vegan Chocolate Chip Cookies Recipe by Tasty a spatula. Bake at 325°F for about 10-12 minutes. Cool to the pan for 10 minutes before turning out onto a wire rack.
Notes: It is extremely important to quantify both the wheat and oats properly employing this technique or a kitchen scale. (? That's the one I have and adore!) Too much of either could dry from the cookies and leave them cakey rather than chewy.
Instant oats are also referred to as quick-cooking or minute oats. They arrive in huge canisters, just like old-fashioned oats. They are not the ones in the small flavored loaf of bread.
